Hosting the Holiday Feast Class at Wind & Rye

IN CHARGE OF THIS YEAR’S HOLIDAY FEAST FOR FAMILY OR FRIENDS? THIS IS THE CLASS FOR YOU!
Many people, even those that consider themselves great cooks, have difficulty when it comes to planning a menu and executing a large meal for a crowd. Let Chefs Daniel Kedan and Laci Sandoval help you make a plan for success with this full day workshop.
Students will begin by understanding the importance of balanced menu planning. Not just about incorporating all the food groups, a balanced menu consists of things that can be prepped in advance, dishes finished al la minute, textures and flavors for every palate and a variety of warm and cold items. Even refrigeration space will be considered! After the menu has been set, it’s time to get yourself set up for success! Prep work is the key to a successful meal and we will discuss when the work for each dish should begin. How is there time to make everything with a giant turkey in your oven? We will show you the secrets of brining, butchering and roasting a bird without compromising the other recipes on your list. Beef Wellington is an impressive but often intimidating dish for lots of home cooks. We will help you step by step through preparing this crowd pleasing entree so you’ll feel confident preparing your own! For those more interested in creating a meatless meal, Chef Daniel will demonstrate how to showcase Sonoma County’s fall harvest with vegetable dishes that can be side dishes OR the main course. Don’t forget dessert! Laci will share some of her show stopping holiday favorites. Working together we will prepare a true Holiday Feast and sit down together to toast one another and enjoy the fruits of our labor.
From recipes to resource lists, shopping guides to timelines, you’ll leave with everything you need to host a gourmet meal for the ones you love.
Snacks, drinks and lunch will be provided with a full meal feast at the end of class.
Menus will include both meat and gluten-full items. If you can not tolerate handling these or other items, we will do our best to accommodate your needs but please note they will be a part of the course. Please notify us of any allergies prior to registering for class.
