Pax Wines was founded in 2000 with a mission to explore the untapped potential of Syrah from cool climates, and today features a diverse lineup of small production wines from organic & sustainably farmed vineyards. Following a classic & minimal winemaking philosophy, each wine is foot-stomped, fermented using only ambient yeasts, aged primarily in Neutral French Oak and concrete, and bottled with no unnatural additions in order to purely express the unique and ephemeral quality of each vintage and site. With roll-up garage doors, indoor & outdoor seating, and vinyl on the turntable, our Tasting Room in downtown Sebastopol is just the place to enjoy a casual tasting or glass, or indulge in a comprehensive Tasting & Tour experience.
